Milk Sweet Au Bain Marie / Dulce de Leche al Baño María

Hi. Heather and Thistle here. Today, we are going  to make Milk Sweet. Milk Sweet is very easy to make thanks to a technique invented by our Mum’s great friend, Mary Prophetisima, also known as Mary the Jewess. Mary is considered the first true alchemist of the Western world and has been practicing for far more than a thousand years. The technique we are going to employ is named after her.  It is called bain-marie, or Mary´s bath. It consists of putting something you wish to cook in a container and then putting that container in a second container about half filled with water or some other liquid. Then you boil the thing in the first container in the water of the second. This isn’t only done in kitchens. It is also useful in science labs.

Hola.  Aquí Brezo y Cardo. Hoy vamos a hacer dulce de leche. El dulce de leche es muy fácil de hacer gracias a una técnica inventada por la gran amiga de nuestra madre, María Profetísima, también conocida como María la judía. María es considerada la primera verdadera alquimista del mundo occidental y ha ejercido de alquimista durante mucho más de mil años. La técnica que vamos a emplear lleva su nombre. Se llama baño María y consiste en poner algo que quieres cocer en un contenedor y luego meter ese primer contenedor en un segundo contenedor lleno de agua o algún otro liquido. Entonces cueces el contenido del primer contenedor en el líquido del segundo. Esto no se hace solamente en la cocina. También es útil en los laboratorios de ciencias.

Here goes our recipe for Milk Sweet, step by step. / Ahí va nuestra receta de dulce de leche, paso a paso.

1.  Take a can of condensed milk and remove its label. / Coge una lata de leche condensada y quita la etiqueta.  

2.  Make two tiny holes in the top of the can with a can opener. The holes should be on opposite sides of the top of the can.  If you don´t do this, the can might turn into a domestic bomb and explode, leaving the Milk Sweet all over your ceiling. And that is the least that can happen. / Haced dos agujeros  muy pequeños en la tapa de la lata con un abrelatas. Los agujeros deben estar en puntas opuestas de la tapa de la lata. Si no haces los agujeros, puede que la lata se convierta en una bomba casera y explote, dejando el dulce de leche pegado al techo de vuestra cocina. Y eso es lo menos que podría ocurrir.

3.  Put the can in a small pot and fill the pan with water leaving only one inch of the can uncovered by the water. You must do this so the water won´t enter the can through the holes you made. / Pon la lata en una cacerola pequeña y llena la olla de agua, dejando sólo cosa de una pulgada de la lata por encima del agua. Debes hacer esto para que el agua no entre en la lata por los agujeros que hiciste.

4.  Put the pot on the cooker at medium heat. Keep an eye on the water until it comes to a boil, then lower the heat. / Pon la cacerola a hervir a fuego medio y vigila el agua hasta que empiece a hervir. Entonces baja el fuego a fuego lento.

5. Be patient. The longer you allow the milk to boíl, the harder the Milk Sweet will be. The process can take from three to four hours depending on how hard you like the milk.  / Ten paciencia. Cuanto más tiempo dejes hervir la leche, más duro saldrá el dulce de leche. El proceso suele llevar de tres a cuatro horas dependiendo de cómo de hecha te guste la leche.

6.  If milk starts to come out of the holes you made, try to remove it with a spoon. Don´t let the milk fall into the water. / Si empieza a salir leche por los agujeros que hiciste, intenta retirarla con una cucharita. No dejes que caiga en el agua.

7. After three or four hours have passed, according to your choice, turn off the heat and remove the can from the pan with pincers or kitchen gloves so you won’t burn your fingers. Allow the can to cool on a rack. / Cuando hayan pasado las tres o cuatro horas, según tu gusto, apaga el fuego y saca la lata con pinzas o guantes de cocina de la cacerola para no quemarte los dedos.   Deja que se enfríe la lata sobre una rejilla.

8. Open the can carefully with a canopener.  Turn the can upside down over a bowl or deep plate and let the Milk Sweet fall out, scraping whatever clings to the can with a spatula./ Abre la lata con cuidado con un abrelatas. Vuelca la lata sobre un bol o plato hondo y extrae el dulce de leche que no caiga con una espátula.  

 9. You can beat the Milk Sweet if you like so it will all have the same texture. / Puedes batir el dulce de leche si quieres para que toda tenga la misma textura.

10. Enjoy it or keep it in the fridge. But don´t forget to clean up the kitchen. / Disfruta del dulce o guárdalo en el frigorífico. Pero no te olvides de limpiar la cocina.

Martin Goes to The Hebrides / Martin se va a las Hébridas

It looks like we are going to be stuck on the wrong side of a door to hell for at least a month. So since we're grounded in a school, infernal to boot, and despite this being August, we´ve decided to get on with our work and learn more English. Moll Avery has let us have a computer and we´ve done some research on the area Arley is visiting. We´ve  prepared a short text about it for you to read with some questions to answer. 

Parece que nos vamos a quedar atrapadas en el lado equivocado de una puerta al infierno por lo menos un mes. Así que como estamos en una escuela, que encima es infernal, y a pesar de que es agosto, hemos decidido seguir con nuestro trabajo y aprender más inglés. Mariálvara nos ha dejado un ordenador y hemos investigado sobre la zona que está visitando Arley. Hemos preparado un texto para leer y unas preguntas sobre el mismo.

Martin Goes to the Hebrides / Martín se va a las Hébridas.
   
I – Read the text:

Martin's hobbies are walking, gardening and bird watching, so it isn't surprising that he decided to go on holiday to the Hebrides. He has been having a great time this summer touring this area. He arrived in time to see the machair flowers in bloom. These are many different kinds of wild flowers, including orchids, that blossom splendidly thanks to seaweed and shellfish that have been ground down, washed ashore and blown inland. This mixture, called machair, makes the land very fertile, and thanks to it, fields in the Hebrides are splendid to behold for a few weeks in summer.

Los pasatiempos de Martín son caminar, la jardineria y la ornitología así que no es de sorprender que se haya ido de vacaciones a las Hébridas. Se lo ha estado pasando pipa en este lugar. Llegó a tiempo de ver las flores de machair en plena floración. Estas son distintas variedades de flores silvestres, incluyendo orquideas, que florecen espectacularmente gracias a algas y crustáceos reducidos a polvo que ha sido arrastrado hasta la orilla del mar por las corrientes y que el viento esparce por los campos. Esta mezcla, llamada machair, hace qe la tierra sea muy fértil y gracias a esto los prados de las Hébridas lucen espléndidos durante unas cuantas semanas en el verano.   


Martin got to see a lot of birds too. Razorbills, shags, guillemots, fulmars and kittiwakes  are only a few feathered friends he has seen. New to him were the bonxies, great skuas that are the winged pirates of the seas. They frighten and harass other birds to steal their food and even make a meal of smaller birds. And they are not at all daunted by humans. 

Martin también ha conseguido estudiar a un montón de pájaros. Alcas tordas, corvos marínos, pájaros arao, fulmares boreales y gaviotas tridáctilas son sólo algunos amigos aladas que ha visto. Nuevos para él  eran los bonxies, enormes skuas que son los piratas alados de los mares. Asustan y acosan a otros pájaros para quitarles la comida y hasta se zampan a algún que otro pájaro pequeño. Y no les dan miedo los humanos.   


 

Before he leaves for home, he wants to spend three days in one of the Shiant Islands, which are in the heart of the Minch, a strait in north - west Scotland.  He will take a dinghy to get there. The ride will cost him about five hundred pounds, but he thinks it will be money very well spent because he expects to see wonders when he gets there. He hopes he won´t have any trouble with the basking sharks or the Blue Men of the Minch on his way there. 

Antes de volver a casa, Martin quiere pasar tres días en una de las islas Shiant, que están en el corazón del Minch, un estrecho que hay en el noroeste de Escocia. Llegará hasta allí en un botecito. El viaje le va a costar cosa de quinientas libras, pero el piensa que el dinero va a estar muy bien empleado porque espera ver maravillas cuando llegue hasta allí.  

Martin hopes he won´t have any trouble with the basking sharks or the Blue Men of the Minch on his way there. The first are the second biggest fish in the world and used to be fished for liver oil but are now a protected species. As for the second, they are legendary creatures that haunt the deep and come out during storms to recruit new members for their tribe. Martin is fond of the sea, but would rather not be drowned in a tempest, so he is quite happy that the weather forecast says it will be fine all three days of his stay at the island he is visiting.

Martín espera no tener problemas con los tiburones peregrinos, ni con los hombres azules de Minch. Los primeros son el segundo pez más grande del mundo y los pescaban para obtener aceite de hígado, pero ahora son especie protegida. En cuanto a los segundos, se trata de unos seres mitológicos que habitan en lo más profundo del estrecho y salen durante las tormentas a reclutar nuevos miembros para su tribu. A Martín le encanta el mar, pero preferiría no ahogarse durante una tempestad, así que se alegra de que el parte meteorológico anuncie que va a hacer buen tiempo durante los tres días que piensa permanecer en la isla que va a visitar.   



When he gets to the island, a shepherd, who is the only person who lives on it, will give him a key to a stone cottage where he will sleep during his stay. He won´t have to pay for the use of this house, which is more of a shelter than a home. It doesn´t have a toilet or running water and there is no electricity on the island. 

 Cuando llegue a la isla, un pastor, que es la única persona que vive allí, va a darle la llave de una casita de piedra en la que podrá dormir durante su estancia. No va a tener que pagar un céntimo por hospedarse en la casita, que es más un refugio que un hogar. Pero no tiene baño ni agua corriente y no hay electricidad en la isla. 

However, he can get drinking water from a well a little ways from the house. He will have to bring food for three days with him, but must be very careful where and how he keeps it because there are black rats on the island that eat up anything they find. He has been told not to bury or burn his garbage, but to bring it back with him when he leaves the island. 

Sin embargo, podrá obtener agua potable de un pozo que está relativamente cerca de la casa. Tendrá que llevar con él comida para los tres días, pero debe tener mucho cuidado dónde y cómo la guarda, pues hay ratas negras en la isla que están dispuestas a comérsela toda. Le han dicho que no debe enterrar ni quemar su basura. Tendrá que llevársela con él cuando se vaya de la isla.  

Why would he want to stay at a place like this? Because his favorite bird is the Atlantic puffin and there is a colony of these birds on the island. They won´t be there for long. In a few days it will be mid-August and they will be leaving for the Bay of Biscay.

 ¿Por qué iba a querer quedarse en un sitio así?Porque su pájaro favorito es el frailecillo común y hay una colonia de estos pájaros en la isla. No van a permanecer allí mucho tiempo. Dentro de unos días será mediados de agosto y partirán para el golfo de Vizcaya.

She Who Sold Seashells / La que vendía conchas marinas




The first day of this school year we learned a tongue twister: “She sells seashells by the seashore.” Today, when we are near the end of the school year, we will learn who “she” was.

El primer día de clase aprendimos un trabalenguas en inglés que traducido literalmente al español dice, “Ella vende conchas junto a la orilla del mar.” Hoy, que estamos terminando el curso, sabremos quién era “ella.”


Selling seashells by the seashore sounds awfully idyllic, but in truth it can be very tough. Mary Anning didn´t have it easy. From the very first, she was used to tragedy and danger. When she was a baby, three women standing under a tree, one with little Mary in her arms, were struck and killed by a bolt of lightning. Only Mary survived.

Vender conchas marinas junto al mar suena muy idílico, pero en realidad puede ser muy duro. María Anning no lo tuvo fácil. De hecho, desde el principio estuvo acostumbrada a la tragedia y al peligro. Cuando era un bebé, tres mujeres que estaban de pie bajo un árbol, una de ellas con la pequeña María en sus brazos, fueron alcanzadas y fulminadas por un rayo. Sólo la niña sobrevivió.  


Mary´s family lived in a house by the coast of the English Channel. It was so close to the sea that it was often flooded. Once the flood was so bad, that Mary and her family were in danger of drowning.

La familia de María vivía en una casita junto a la costa del Canal de La Mancha. Estaba tan cerca del mar que con frecuencia éste la inundaba. En una de estas ocasiones María y su familia casi perdieron la vida, ya que estuvieron a punto de ahogarse.





The Annings were poor. Her father was a cabinetmaker who earned some extra money selling fossils to tourists. The fossils the family sold were from marine fossil beds of the Jurassic Period. These fossils were to be found on cliffs where landslides were frequent, especially in winter, so this was a dangerous business to be in.

Los Anning eran pobres. El padre era un ebanista que ganaba un dinero extra vendiendo fósiles a turistas. Los fósiles que la familia vendía procedían de unos lechos de fósiles marinos del periodo Jurásico. Se conseguían en unos acantilados en los que los derrumbamientos de tierra eran frecuentes, sobre todo en invierno, así que se trataba de un negocio muy peligroso.   


Aside from being poor, the Annings were also religious dissenters. A religious dissenter was a protestant who did not want to belong to the official religion of the state, that is, the Church of England. At that time, this turned you into a kind of pariah.

Los Anning no solo eran pobres. También eran disidentes religiosos. Un disidente religioso era una protestante que no quería seguir la religión oficial del estado, es decir, que no quería pertenecer a la Iglesia de Inglaterra. En aquel entonces, esto te convertía en una especie de paria. 




Despite these difficulties and many other personal tragedies, Mary grew up to become an expert paleontologist. Mary was only twelve when she and her brother found the first ichthyosaur skeleton to be properly identified. Among her other finds were the first two plesiosaur skeletons ever found and the first pterosaur to be found outside Germany. She also found many important fish fossils.

A pesar de estas dificultades y muchas otras tragedias personales, Mary llegó a ser una experta paleontóloga. Sólo tenía doce años cuando ella y su hermano encontraron el primer esqueleto de ictiosaurio que fue identificado oficialmente como tal. Fue la primera en encontrar esqueletos de plesiosaurios, y también encontró el primer pterosaurio hallado fuera de Alemania. Sus hallazgos de fósiles de peces también fueron muy significativos.


Mary sold her finds to the scientific community of her time, made up mostly of wealthy men from upper class families. But she never made much money with her fossils. In fact, at one time, if one of her clients, Lieutenant-Colonel Birch, had not taken pity on her and sold all his collection of fossils in an auction and given her the money thus raised, she would have sank into the most abject poverty.

María vendía sus fósiles a la comunidad científica de la época, compuesta sobre todo por hombres ricos de familias de clase alta. Pero ella nunca ganó mucho dinero con las ventas. De hecho, hubo un momento en su vida en el que hubiese quedado en la más abyecta miseria si uno de sus clientes, el teniente coronel Tomás Jacobo Birch, no se hubiese apiadado de ella. Este hombre vendió su colección de fósiles en una subasta para ayudar económicamente a María.


After receiving this aid, Mary was able to survive and carry on with her work. Eventually she bought a shop with a glass window right by the ocean. It became famous among the geologists of all Europe.  But since she was a woman and a religious dissenter, this prevented her from ever being fully accepted by the scientific community.

Al recibir esta ayuda, María pudo sobrevivir en el negocio y eventualmente llegó a comprar una pequeña tienda con un escaparate, justo al lado del mar. La tiendecita se hizo famosa entre los geólogos de toda Europa. Pero como María era una mujer y una disidente religiosa, nunca fue aceptada del todo por la comunidad científica. 


It was not until she died that she received formal recognition. The president of the Royal Geological Society wrote a eulogy for Mary, the first to be given in that society for a woman. Today she is recognized as one of the ten women who have most influenced the history of science.

No recibió reconocimiento formal hasta su muerte. Entonces el presidente de la Real Sociedad Geológica escribió un panegírico para María, el primero sobre una mujer que fue leído en esa sociedad. Hoy es considerada una de las diez mujeres que más han influido en la historia de la ciencia.  


In the portrait above this text, Mary is with her dog, Tray, who was her constant companion when she went searching for fossils until he was killed in a landslide that could have ended Mary´s life too.    

En el retrato que encabeza esta entrada, María está junto a su perro Tray, que la acompañaba fielmente cuando salía a buscar fósiles hasta que murió en un derrumbe que pudo haberle costado la vida también a María.
